Just had waffle/pancake/pizzas. Batter cooked as waffles (no sugar), smeared with a tiny bit of tomato paste and topped with chopped ham, grated cheese and sweetcorn, under the grill to melt the cheese. They are going on the 'I'll make those again' list.

If they are dense you are doing them wrong. Proper pancakes are wafer thin and light as air. I still prefer them with lemon juice and sugar or even just a slick or butter but that's because I want to enjoy the delicious pancake taste. With crappier pancakes, I like to load them up with sauce, fruit and cream because then the pancake is mainly a conduit for the filling. That's nice enough in it's own right but nothing like a light, fluffy, sliver of a really good pancake. Nom.:p

Nope, even the thinnest ones have a dense texture. You just don't notice it as much because they are thin. Thin ones are made with plain flour, so no raising agent. And to keep them thin, nothing must be added that will cause them to rise. There's no way for them NOT to be dense. And I actually like the dense texture, I just think dense condiments don't go with them. I like the contrast between dense pancake and sharp lemon.
